The Blue Seal Turbofan is the convection oven in a very large share of Australian cafés and bakeries. It is made by Moffat, which manufactures and supports commercial equipment in Australia and New Zealand, and it is built to run all day.

When it does play up, it shows very few codes. Most of what goes wrong has no code at all, and a good share of it can be fixed without a technician. The codes on the display

Err 001: oven probe error

The temperature probe inside the oven has failed or is reading incorrectly, so the controller cannot regulate the cavity. Moffat’s instruction is to call for service.

Err 003: depends on your model

This is where many online answers go wrong. Moffat’s manuals give it two different meanings:

  • In the E32D5 manual, Err 003 is a digital input error.
  • In the newer 30D series manual, which also covers the gas G32D5, Err 003 is the burner box thermal overload switch tripping.

Both call for service. Tell your technician the exact model from the data plate, because the two point to different parts.

CP flashing, alarm sounding, program paused

The oven is running a program that uses the core temperature probe, and the probe is not connected. Plug the core probe into the control panel. If it is connected and CP persists, the core probe itself is faulty and needs replacing. Staff can fix this one.

Faults you can check before calling

These come straight from Moffat’s tables, and each takes a minute.

  1. The oven does nothing at all: Check the mains isolating switch, circuit breaker and fuses. If there are no lights at all, not even the power light, the over-temperature cut-out may have tripped, and that needs a technician.
  2. Gas models: the igniter sparks three times but no flame lights: Check the gas supply is on, then turn the oven off and on again to reset the ignition control. The same reset applies if the ignition control has gone into lock-out.
  3. The door won’t close fully: A tray sitting in the way, a misaligned door, or a door seal not seated properly. Reposition the tray, realign the door, or refit the seal as the cleaning section of the manual describes.
  4. The oven light is out: Replace the bulb. If it still will not light, call for service.

Uneven cooking is usually not a fault

This is the most common Turbofan complaint, and Moffat’s list of causes is mostly operational:

  • Temperature set too high: Select a lower temperature.
  • Oven or racks not level: Check both.
  • Not enough air space around trays: Space the racks so air can move around the product on every shelf.
  • Too much product loaded: Reload with less.
  • Opening the door unnecessarily: Keep it closed during baking.
  • A damaged or faulty door seal: Check it and replace if needed.
  • A restricted oven vent: Make sure it is not blocked or covered.

A convection oven depends on air moving freely. Overloaded trays, trays jammed edge to edge, or a vent covered by something on the shelf above will produce patchy results in a perfectly healthy oven. A fan that stops while the elements keep heating is worth treating as urgent. Without airflow, a convection oven overheats its product and its own cavity quickly. Switch it off.

Moffat asks for the model and serial number, found on the technical data plate on the front right-hand side panel of the oven. Have both, plus the exact code or symptom and whether it is gas or electric.
