Winterhalter machines tell you how serious a problem is before you read a word of it. The start button changes colour, and that colour is the first diagnostic you have.

Read the start button first
The start button on a UC series machine is a status light as well as a control.

Red is the one that ends the shift. Everything else is normal operation.

Two categories, and only one stops service
Winterhalter separates its messages deliberately, and the distinction is the most useful thing on this page.
Pictograms are notifications. They appear in the display area as symbols and washing continues. Winterhalter’s own wording is that with several notifications present, washing is still possible but the end wash result will be impaired. Tap the pictogram for more information.
Serious errors stop the machine. A red bar appears across the top of the display, the start button turns red, and washing is no longer possible. The manual gives a sequence to call up the error code. Note it and contact an authorised service technician.
So a pictogram means fix it soon. A red bar means stop.
The notifications your team can clear
Most pictograms have an action attached that any trained staff member can take.
- Lack of detergent or rinse aid. Refill the storage tanks or replace the canister, then prime the dosing device.
- Lack of salt on machines with an integrated softener. Fill with regeneration salt. The symbol clears after about three wash cycles once some salt has dissolved, so do not keep refilling it.
- Strainer clogged. Clean the strainer and restart the programme.
- Open the door. Close it.
- Lack of water. Open the water supply first. If it is already on, the dirt trap needs cleaning or replacing and the solenoid valve needs checking, both technician jobs.
- Upper or lower wash field does not rotate. Remove the obstruction, then clean or descale the jets. On the lower field, check it is engaged correctly first.
- Descaling required. Run the descaling programme.
- Demineralisation cartridge used up. Replace a partial demineralisation cartridge and reset the water countdown meter. A full demineralisation cartridge needs its resin replaced by a technician.
- Service interval expired. Contact a technician. Nothing has broken.
Two more are worth calling out separately.
The A0 message is a compliance message
Winterhalter UC machines can run in A0-30 or A0-60 wash modes, which raise temperature and extend wash time to meet A0 hygiene requirements. If those values are not met, the washing process stops after 20 minutes.
The pictogram that follows says something important: hygiene in accordance with A0 requirements is not guaranteed, and the A0 washing programme must be restarted.
That is not a performance note. Under Standard 3.2.2 of the Australia New Zealand Food Standards Code, a food business must ensure eating and drinking utensils and food contact surfaces are clean and sanitised. A cancelled A0 cycle means that rack did not meet the standard the machine was set to meet. It goes back through.
The chef menu also holds a hygiene logbook showing daily operating statuses in chronological order. If an Environmental Health Officer asks what the machine was doing on a given day, that is where the answer lives. The menu is PIN protected and the PIN is in your operating instructions.
The “various” pictogram
One symbol simply means various. Winterhalter’s instruction for it is to tap the pictogram, note the error code that appears, and contact an authorised service technician.
If your team reports a symbol on the Winterhalter, ask them to tap it and read out the number. That question saves a diagnostic visit.
Scale is the Australian problem
Winterhalter is explicit that a machine run on hard water without treatment will scale up the boiler, interior, water lines and components. Limescale contributes to hygiene risk, and scaling leads to heating element failure.
The company recommends softened water above 3 °dH total hardness. Adelaide and parts of Perth, Brisbane and regional Australia sit above that.
The descaling programme handles the inside of the machine. The water lines and the boiler can only be descaled by an authorised technician, which is why a machine that has never been serviced eventually needs more than a cycle. Water supply specifications worth checking
A good number of “faulty machine” calls are supply problems. Winterhalter’s published requirements for the UC range:
- Minimum water flow pressure: 100 kPa (1.0 bar) on standard and Cool machines, 150 kPa on Energy, 140 kPa on Excellence-i
- Minimum flow rate: 4 litres per minute, or 3 on Energy machines
- Maximum inlet temperature: 60°C standard, 20°C on Energy and Cool, 35°C on Excellence-i
- Do not operate below 0°C, and the installation site must be frost-resistant
A machine plumbed into hot water when it should be on cold, or running on marginal pressure, produces recurring faults that no part replacement fixes.
When to book
Book on a red start button, on any called-up error code, on a wash field that will not turn after cleaning, and on a notification that returns after your team has cleared its cause.
